An unusual combination

I have been down with cold and cough for almost 2 weeks now, allergies mainly, but I am so very done with the feeling of being sick. Its been up and down, literally following the weather and temperature pattern. So to calm down my throat and open up the clogged nasal passages I decided to do some basic tomato and carrot soup. Simple enough, we would like to think. But that’s not the case when you also have a hungry tween at home who wouldn’t settle for just the soup… 🙂

Not in the mood to do anything elaborate and carb-laden (you see I am trying to include healthy and clean eating in my family’s food) I thought why not marinated baked tofu. Well, tomato soup and asian baked tofu isn’t exactly the usual combination, but I was quite pleasantly surprised myself when i finally got down to dinner. Light asian flavors paired very well with the creamy tomato soup. Not to forget, the tofu steaks filled up our tummies quite well, with some left overs…

So here it goes… Marinated baked tofu.

Ingredients:

  • 1 pack (16 oz) firm/extra firm tofu
  • 2 tbsp dark soy sauce
  • 2 tbsp maple syrup/agave nectar
  • 1 tbsp sriracha sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp minced/grated ginger
  • 1 tsp minced/grated garlic
  • salt (to taste. you may not need salt since there’s enough in the soy sauce)
  • sesame seeds (to coat the tofu slices)

Method:

  • drain water from tofu and dry it with kitehcn towels (drier the tofu, better it bakes)
  • slice tofu into 8 slices
  • mix together soy sauce, maple syrup/agave nectar, sriracha sauce, sesame oil, grated ginger and grated garlic. check for salt and add some to your taste.
  • gently tip in the tofu slices and ensure each slice is drenched in the marinade mix.
  • cover the dish and leave to marinade in the refrigerator for about 2 hrs (can leave longer for better flavor absorption)
  • remove the dish from the refrigerator.
  • preheat oven to 400 F (205 C)
  • spray a baking sheet with oil
  • dredge tofu slices in sesame seeds to ensure it is covered well.
  • lay slices on baking sheet.
  • bake for 30 minutes, flipping the tofu slices once half way through
